Nick, Dick et al,

Among the by-products of the milpa which no one has mentioned but which 
is delicious to eat and also procures important nutritional elements is 
huitlacoche, a not-so-inviting-looking fungus that grows on the corn ear 
and which, I understand, is a close relative to penicillin.

And, judging from the delicious food of Puebla, Oaxaca and Yucatan (to 
mention but the most notable regional cuisines of Mexico), rich in 
pre-Columbian ingredients, Mesoamerican peoples were probably far from 
bored with their chow options. In fact, I never cease to be amazed at 
the comparatively poor cuisines of both Guatemala and Honduras (I hope 
Guatemalan and Honduran listeros will forgive me here: I love your 
countries, your people, your natural beauties, but not your food), given 
the fact that they both have always been a vital part of Mesoamerica and 
one would have imagined they would have shared in its rich cuisine.

Am I disgressing? Then I guess it's time for lunch.
