Hi Dick! I don't know if you remember me or not, but
I'm a friend of Sue's. I have lived in Teotihuacan
for about 24 years now, and married into one of the
local families (my husband is now Director of the
Arch. Zone). Our family are campesinos, and we grow
corn, squah, beans and have an additional parcel for
tunas. Now, I don't know what kind of squash in
particular you are talking about for G.N. Cave, but
here we grow chilacayotes. We eat them young and
tender a lot, but most grow to at least the size of a
regularly large jack-o-lantern pumpkin. All we do is
harvest them when the vine dies and bring them in. We
put them in the yard and don't pay much attention to
them, and they last just fine on their own all year.
They never get bothered by bugs because those insects
that affect them die after harvest season, so they are
safe just sitting around. We mostly make a healthy
dessert out of them after that, but I think it's
because by that time we are sick of eating it as
vegetable. Come on over and I'll have my
mother-in-law make you up a batch from last year's stock!
