[Aztlan] Queso Napolitan

The requests have now reached three, so for all of you who might like to 
try it, here's the recipe.

Preheat oven to 350.


In a food processor or blender (no, that's not the technique the Merida 
vendor gave me, but it's a lot easier) mix:

1 can sweetened condensed milk (I know - sacrilege to all foodies, but 
trust me, it works)
2 tsp vanilla
5 eggs

In a saucepan, melt about 1/3 cup sugar and when you think it's a nice 
amber color, KEEP GOING.  Remember you have to keep stirring.  The secret 
is to really burn the stuff, so it's bitter rather than sweet.  Pour it 
into a deep pie or quiche dish and swirl it around to cover the bottom and 
some of the sides. It will start to harden almost immediately.

Pour the  milk/egg mixture on top of the into the now slightly solidified 
syrup.  Place the dish into a water bath, and put the whole thing into the 
oven.  Bake for about an hour (the usual clean knife test tells you when 
it's done).  Remove from the water bath and chill it.

To serve,  take the dish out of the refrigerator and rest it in a dish with 
about 1/2 inch of warm water until the caramel melts and you can invert the 
queso into a serving dish with sides high enough to prevent the caramel 
from running onto the table.  Nothing worse than cleaning up hardened syrup 
(trust me- I know!).

You'll want to cut this into very small wedges and spoon more of the 
caramel on top.  Enjoy.
