I would also add that the carvings from Chalcatzingo
are not necessarily of jaguars.  They seem to be of
some fantastical mix of saurian and feline (much like
other Olmec iconography).

I have some photos of Chalcatzingo on my website if
others would like to take a peek.  Drawings of these
monuments are available in David Grove's "Ancient
Chalcatzingo" volume, and a few are in INAH's
Arqueologia Mexicana special edition on the Olmecs.
